Preparation steps

Boil a large pot of salted water. Place the lobster in it head down into the bubbling water and cook, turning occasionally. The cooking time depends on the size. 500 gram (approximately 1 pound) lobsters need about 8-10 minutes. For every additional 500 grams, expect another 5 minutes to cook.

Then lift out with a skimmer from the water and allow to cool briefly. Detach the rubber bands, break down the cooked lobster into the individual components and remove the meat.

Cut the rolls in half and toast the cut surfaces if desired (such as in the toaster). Peel the onion and cut into rings. Rinse the tomatoes, remove the stalks and cut into wedges. Cook in hot oil, sprinkle with sugar and toss briefly. Season with salt and set aside. Cut the avocado in half, separate from the peel and cut into thick slices. Brush with lime juice. Mix the mayonnaise with caviar.

Spread the mayonnaise on the bottoms of the rolls thinly. Then place the onion rings, tomato and avocado pieces. Add a piece of lobster and place on the other half of the rolls. Garnish to taste with herbs. Serve with the remaining mayonnaise.
