2 Tbsps finely chopped cilantro
1 yellow Bell pepper
3 Tbsps olive oil

Preparation steps

For the Burgers: Peel and halve onion. Finely chop half of onion. Peel garlic and press through a garlic press. In a bowl, combine onion, garlic, herbs, ground lamb and tomato paste. Season with salt and pepper and mix thoroughly. Form mixture into 4 burgers. Cover and chill 30 minutes in the refrigerator.

For the salsa: Peel onion and cut into small cubes. Blanch tomatoes, then rinse, peel and core. Quarter tomatoes and cut into small cubes. Rinse and halve peppers, then remove seeds and ribs and cut into small pieces.

Combine onions, tomatoes, peppers, cilantro leaves and oil. Season with salt and pepper.

Heat oil and butter in a pan. Cook burgers until browned, 4-5 minutes per side.

Meanwhile, warm buns in the oven.

To serve, halve rolls. Spread bottom halves with a little mayonnaise and top with burgers and salsa. Garnish with parsley leaves. Place top halves of buns on burgers, or leave open-faced.
