Burgers with Oyster Mushrooms

- 2 handfuls Arugula
- 1 red onion
- 100 milliliters vegetable oil
- 8 Oyster mushrooms
- salt
- freshly ground peppers
- 3 Tbsps Pastry flour
- 1 egg
- 100 grams breadcrumbs
- 500 grams Ground beef
- 4 White rolls (with poppy and sesame seeds)
- 4 slices Processed cheese
- 4 Tbsps Mayonnaise
- 1 Tbsp lemon juice
- 1 Tbsp Whipped cream
- herb salt
Preparation steps
Preheat the oven to 100°C (approximately 210°F) convection.
Rinse the arugula, spin dry and tear smaller. Peel the onion, cut into strips and cook slowly in 1-2 tablespoons of oil until soft. Clean the mushrooms and season with salt and pepper. Coat in flour, then pass through the whisked egg and coat with the breadcrumbs. Cook in another 2-3 tablespoons of hot oil on both sides 2-3 minutes each and then keep warm in the oven.
Season the ground beef with salt and pepper, thoroughly knead in a bowl and form four patties. Cook in another 2-3 tablespoons oil on both sides about 6 minutes. Cut the rolls in half and top the undersides of each with a burger. Put 1 slice of cheese on each and place in the oven so the cheese melts slowly. Place the roll lids in as well to toast a little.
Mix the mayonnaise with the lemon juice and the cream and flavor with herb salt.
Take the baked burger from the ovens and distribute the arugula on top. Top with the onions and breaded mushrooms. Spread on the mayonnaise and serve topped with the roll lids.
As desired serve with fries and pickles.
