- For the salad
- 500 grams younger Green cabbage
- 1 Tbsp salt
- 1 Tbsp vegetable oil
- 50 grams smoked Bacon
- 1 onion
- For the marinade
- 3 Tbsps vegetable oil
- 2 Tbsps White vinegar
- 1 pinch sugar
- freshly ground peppers
- 1 tsp Mustard
- 1 tsp Horseradish
- 1 tsp Caraway
- salt
- Chives (to sprinkle)
Preparation steps
1.
For the salad, brush the cabbage. Rinse and halve the cabbage. Thinly shave, and add to a bowl. Sprinkle with salt, and mash lightly with a potato masher. Let soak for 30 minutes.

Heat the oil in a pan. Dice the bacon into small cubes, and sauté until crispy. Remove from the pan set aside.
3.
Peel and finely chop the onion.
4.
Mix all the ingredients for the marinade, minus the salt. Mix the marinade with the bacon, cabbage and the onion. Mix well and let rest for 30 minutes. Adjust the seasoning before serving, if necessary.
5.
Thinly slice the chives, sprinkle over the salad, and serve.
