Preparation steps

1.

Discard outer leaves of the cabbage. Cut cabbage into quarters and cut out stalk from each piece. Slice or grate cabbage into strips. Place in a salad bowl, season with salt and knead by hand until the cabbage is slightly pliable and yet remains crisp.

2.

Rinse bell peppers and cut into thin strips. Rinse the parsley and chop finely. Mix both with the cabbage.

3.

Season vinegar with pepper and whisk in oil. Pour over the slaw, mix well and allow to marinate briefly. Season to taste. Serve with a hearty dish such as meatballs, if desired.
