- ½ cup soft butter
- ¼ cup sugar
- ⅔ cup brown sugar
- 1 large egg (beaten)
- 1 tsp ground Vanilla
- 1 ¼ cups flour
- 1 tsp Baking powder
- 1.333 cups Chocolate chip
- 1 cup whipping cream
- 1.333 cups Dark chocolate (chopped)
- 2 Tbsps cream
Preparation steps

Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and line two baking trays with greaseproof paper.

Mix together the butter, sugar and brown sugar until foamy. Gradually add the beaten egg and then add the vanilla. Mix together the flour and baking powder and carefully fold into the egg mixture. Add the chocolate chips.

Using a teaspoon, place dollops of the mixture onto the baking trays leaving around 5 cm distance between each one and the edge of the baking tray. Bake for 10 to 12 min until the cookies are golden brown. Leave to cool on the baking trays for 5 min, then remove from the oven and leave to cool completely before proceeding.

Whip the cream until stiff and place in a piping bag with a star shaped nozzle. Pipe the cream onto one cookie and place another on top to form a whoopie pie. Do this with all the cookies.

Melt the chocolate in a bain-marie and stir in the liquid cream. Arrange the whoopie pies on plates, drizzle with the chocolate sauce and serve immediately.
