Preparation steps

Gently heat the sugar and water in a large pan until the sugar has dissolved. Turn up the heat, bring to a boil and boil fast for 10 minutes.

Meanwhile, heat the oil in another large pan and add the corn. Place a lid on the pan, turn up the heat and cook, shaking the pan from time to time, until the popping noise has stopped.

Turn the popped corn onto a flat serving dish, discarding any kernels that have only partially popped. Remove the caramel pan from the heat, let the bubbles subside then drizzle the caramel over the popcorn and serve.
