Even smarter

Mushrooms have a somewhat meaty texture, so they are a great, hearty ingredient to incorporate into your diet if you're a vegetarian. Mushrooms are very low in calories but provide fiber and other nutrients such as vitamin D and copper. This can be a perfect side dish or it can even be served as a main.

If you want this dish to be vegan, simply replace the butter with olive oil or vegan butter.
