Ingredients

For the filling
4 Tbsps olive oil
butter
1 onion (finely chopped)
9 ozs Mushrooms (finely chopped)
1 sprig thyme (leaves finely chopped)
4 hard-boiled eggs (chopped)
For the pastry
9 ozs potatoes (peeled, boiled and mashed)
2 egg yolks
½ cup olive oil
2 ¼ cups all-purpose flour
1 tsp salt
1 egg (beaten)

Preparation steps

Heat the oven to 200ºC (180º fan) 400ºF, gas mark 6.

For the filling, heat the oil and butter in a frying pan and gently cook the onion until soft but not browned. Add the mushrooms and continue cooking until they are tender then season with salt and pepper and mix into the chopped eggs and thyme.

For the pastry, place the mashed potato into a bowl and add the rest of the ingredients. Mix well to form a dough, adding a little water if necessary, then turn onto a floured work surface and roll out to a thickness of about 0.5cm/1/4".

Cut the pastry into 8cm/3" squares and place a little of the filling in the middle of each. Fold the pastry over to form triangular parcels, moistening the edges with a little water and pressing gently with a fork to form a seal. Brush the parcels with the beaten egg, place on a greased baking tray and bake in the oven for 12 - 15 minutes or until the parcels are golden brown and cooked through.
