- 4 Chicken breasts (ready to cook, skinless, each about 150 grams)
- 150 grams Cheddar cheese
- 150 grams Corn (canned)
- 2 sprigs Sage
- salt
- freshly ground peppers
- vegetable oil (for frying)
- 3 Apple (Granny Smith)
- 2 Tbsps lemon juice
- 3 Tbsps olive oil
- 1 red onion
- 1 pinch sugar
Preparation steps
Preheat oven to 180°C (approximately 350°F).
Rinse chicken breasts, pat dry and make a slice to create a pocket. Drain corn, coarsely mash and mix with cheddar cheese. Rinse sage, shake dry, put some leaves aside for garnish and cut the rest into fine strips. Season corn-cheese mixture with sage, salt and pepper. Fill chicken breasts with cheese mixture and tie with kitchen twine or fasten with toothpicks. Season outside of chicken with salt and pepper and sear in a hot pan briefly with 2 tablespoons oil. Transfer chicken to an oiled baking dish, place in oven and bake for 10-15 minutes.
Rinse apples, quarter, core and grate coarsely. Immediately mix apples with lemon juice and oil. Peel onion, cut into thin rings and add to apples. Season with salt, pepper and a pinch of sugar. Remove chicken breasts from the oven, remove toothpicks or kitchen twine and cut into slices. Garnish chicken with remaining sage and serve with apple slaw.
