1 Tbsp olive oil
3 Tbsps Maple syrup

Preparation steps

Rinse the eggplants and cut into 1.5 cm thick slices (approximately 1/2 inch). Sprinkle with salt and let sit for 10 minutes to bring out the water. Pat dry.

Preheat the oven to 200°C (approximately 400°F).

Roll out the puff pastry and cut out four circles with about 15 cm diameter (approximately 6 inches). Place on a parchment-lined baking sheet. Spread the goat cheese on the dough and leave a small margin. Arrange the eggplant slices on the cheese. Season with salt, pepper and thyme. Drizzle with oil and bake until golden brown, about 25 minutes.

Remove from oven and serve with the maple syrup.
