Preparation steps

Combine the flour, butter (in small flakes) egg yolk, salt and sugar and work to a dough. Cover and chill for at least 30 minutes.

Meanwhile trim and wash the spring onions and cut into rings. Cut the ham into thin strips. Peel and chop the garlic. Heat the oil in a frying pan and sweat the spring onion rings until soft. Add the garlic and season with salt and pepper.

Roll the pastry out thinly on a lightly floured work surface and use to line the greased tart tins. Mix the eggs, cream, grated Emmental and roughly crumbled Gorgonzola and season lightly with salt and pepper. Divide the spring onions and ham between the tart tins and fill up with the egg and cheese mixture. Bake in a preheated oven (200 degrees) for about 20 minutes until nicely browned.
