Preparation steps

Preheat the oven to 140°C (approximately 300°F). In a large pot bring salted water to a boil. Mix the flour, beaten eggs, nutmeg, milk, and salt in a bowl to a firm dough.

Form the spaetzle immediately with a planer. Drop the noodles into the boiling water and simmer for a few minutes. The noodles are done cooking when they float to the surface.

Remove the spaetzle with a slotted spoon, drain and place in a pan with melted butter and swirl to coat. Arrange in a baking dish alternating with grated cheese. Place the dish in the oven and bake until the cheese is melted. Meanwhile, peel the onion, cut into thin rings and cook until golden brown in hot butter. Arrange the cheesy noodles on warmed plates and serve sprinkled with onions and chives.
