500 milliliters Vegetable broth
juiced lemons
150 grams Cornmeal
3 Tbsps butter
3 Tbsps butter
150 grams grated Parmesan

Preparation steps

Peel onion and garlic and chop finely. Heat olive oil in a pot and saute onion and garlic for a few minutes. Add broth and lemon juice and mix well, gradually add polenta, whisking. Bring to a boil, stirring, and cover with a lid. Let swell for about 10 minutes.

Spread polenta on a lined with parchment paper or aluminum foil baking sheet until 1 cm thin (approximately 1/2 inch) and refrigerate for 1-2 hours.

Cut polenta into small squares or rectangles. Butter shallow baking dish with 1 tablespoon of butter. Layer with polenta pieces and sprinkle with Parmesan. Sprinkle with butter flakes and bake in preheated oven at 200°C (gas mark 3-4, fan 180°C) (approximately 400°F) for about 20-25 minutes. Remove from the oven and serve.
