Ingredients
- For the dough and filling
- 100 grams Feta
- 180 grams Gaviera or Kefalotyri cheese (Alternatively Gruyère or Pecorino)
- mint
- 2 eggs
- 2-3 Tablespoons milk
- 1 Tbsp olive oil
- freshly ground pepper
- Nutmeg
- 100 grams butter
- 400 grams Filo dough
Preparation steps
For the filling: mash feta with a fork and finely cut or grate the other cheese. Rinse mint, shake dry and finely chop.
Mix cheeses and mint in a bowl with the eggs. Stir in some milk and oil until softened. Season with pepper and nutmeg.
For the dough: melt butter in a small pan. Cut filo dough into pieces about 15x20 cm (approximately 6x8 inches) and brush with melted butter. Fold dough lengthwise. Spoon 1 teaspoon filling on the bottom right corner of the piece. Fold dough into a triangle. Continue the process until all filling and dough is finished. Brush all triangles with melted butter.
For the brushing: preheat oven to 200°C (approximately 400°F). Mix egg yolk with milk and brush all surfaces of filo triangles. Chill in refrigerator for 15 minutes.
Spray a baking sheet with a little water. Place cheese triangles on it and brush with remaining butter. Bake about 30 minutes until golden.
