1 packet Vanilla sugar
1 packet vanilla pudding mix
2 eggs (Medium)

200 grams Pastry flour

Preparation steps

For the crust, mix both types of flour with sugar in a bowl. Chop butter into pieces and cut into flour with egg and water until dry crumbs form. Knead by hand until smooth. Roll out crust on a lightly floured work surface. Transfer crust to the bottom of a springform pan (28 to 30 cm in diameter, 11 to 12 inches) lined with parchment paper. Crimp crust at the edges. Poke crust several times with a fork. Refrigerate 1 hour.

Preheat oven to 200°C (gas mark 3-4, approximately 400°F).

For the filling, mix quark with sugar, vanilla sugar, vanilla pudding, eggs and lemon zest. Spread filling over crust and smooth.

For the streusel, melt butter and mix with flour and sugar using a hand mixer. Distribute streusel over the top of the filling. Bake cheesecake in oven about 30 to 35 minutes. Allow to cool. Dust with powdered sugar prior to serving.
