- 250 grams thinly sliced Bacon
- 2 scallions
- 250 grams Pastry flour
- salt
- 1 pinch ground Caraway
- freshly ground peppers
- 1 tsp Baking powder
- 200 grams grated Emmentaler cheese
- 4 Tbsps sunflower oil
- 200 milliliters Buttermilk
- 2 eggs
- ground Caraway
- salt

Preparation steps
Preheat the oven to 180°C (approximately 350°F). Grease the wells of a muffin tin with oil and line each with 3-4 slices of bacon.
Rinse the scallions and slice into thin rings. Combine the flour with 1/2 teaspoon of salt, cumin, pepper, baking powder and 60 g of grated cheese. In a separate bowl, whisk together the sunflower oil, buttermilk and eggs. Pour the wet ingredients into the dry ingredients and mix well. Stir in the remaining flour and sliced scallions and mix until smooth. Scoop the batter into the bacon-lined wells and sprinkle with the remaining cheese. Bake for 30 minutes, until a toothpick inserted comes out clean.
Remove from the oven and allow to cool slightly before removing from the muffin tin. Serve warm or at room temperature.
