The chia pudding is ideal for those who do not have time in the morning to prepare a balanced breakfast. To have enough time to swell, the chia seeds need at least two hours - so you are welcome to prepare the mixture the night before and then only have to enjoy in the morning.

- ½ Vanilla bean
- 8 ozs Soy yogurt
- 7 ozs Almond milk
- 4 Tbsps Maple syrup
- 1 pinch salt
- 1 ¾ ozs Chia seeds
- 12 ozs Berry (blackberries, raspberries, blueberries)
- 1 Organic orange (peel and juice)
- 2 ozs Granola (4 TBSP.)
- ½ oz chopped Shelled pistachio (1 TBSP.)

Preparation steps
Cut vanilla bean in half lengthwise and scrape out vanilla pulp with a knife. Mix soy yogurt alternative, almond milk, 3 tbsp. maple syrup, vanilla pulp, salt and chia seeds in a bowl and cover and let soak for at least 2 hours.
For the smoothie, wash berries and set aside 3 ounces for decoration. Put berries in a blender with orange zest and juice. Add remaining maple syrup and 3-4 tablespoons of water. Blend everything on high speed until smooth.
Then stir chia pudding well and pour into glasses, pour smoothie on top of chia pudding. Spread the berries on the glasses, and sprinkle with the granola and the chopped pistachios.
