This delicious summertime recipe is low in calories and fat but packed with lean protein from the chicken and fiber and potassium from the nectarines.
Peaches or plums also work in this dish; just make sure the fruit is firm enough to grill. If it's too ripe, it will fall apart during cooking.

- 4 Chicken breasts (5 oz each)
- 3 Nectarine
- 3 scallions
- salt
- freshly ground peppers
- 2 Tbsps olive oil
- 4 Tbsps melted honey
- Baby spinach (for garnishing)
Preparation steps
1.
Rinse the chicken breasts and pat dry. Cube.
2.
Halve and remove the pits from the nectarines. Slice into wedges.
3.
Remove the roots and ragged tops from the spring onions. Using the entire onion, slice on the diagonal into 1.5" pieces.
4.
Thread the skewers through the chicken, onions and nectarines. Brush with the oil and season with salt and pepper. Place on a hot grill.

Grill and turn frequently for 6-8 minutes. Baste with the melted honey during the last few minutes of grilling time.
6.
Rinse the spinach leaves and shake off any excess water. Arrange the leaves on the plates.
7.
Place the skewers on top. Serve.
