Chicken and Vegetables in Parchment Paper

- 4 Chicken legs (without skin)
- 2 small Zucchini
- 150 grams Snow peas
- 2 Fennel bulb
- 150 grams Cherry tomatoes
- salt
- freshly ground peppers
- ½ tsp dried thyme
- ½ tsp pink peppers
- 4 Tbsps olive oil
- 1 handful Chives
Preparation steps
Preheat the oven to 160°C (approximately 350°F). Rinse chicken drumsticks and pat dry with paper towel. Rinse summer squash, trim and cut into thin slices. Rinse snow peas and trim. Rinse fennel, cut in half and cut into slices. Rinse cherry tomatoes and cut in half.
Season chicken legs with salt, pepper and thyme. Spread 2 layers of parchment paper on a work surface and place 4 chicken drumsticks on the parchment paper, cover with prepared vegetables and season with salt and pepper. Sprinkle with pink pepper and drizzle olive oil over it. Fold parchment paper over filling and cook on a baking sheet in the preheated oven for about 45 minutes.
In the meantime, rinse chives, pat dry and chop. To serve, open parchment paper and sprinkle with chives. Serve immediately.
