2 Red onions
1 tsp clarified butter
1 Tbsp brown sugar
1 Tbsp soy sauce
400 milliliters Chicken broth
1 tsp Sambal oelek
4 Tbsps Peanut butter
250 grams Long grain rice
salt
300 grams Green beans
30 grams salted Peanuts
500 grams Chicken breasts
3 Tbsps Canola oil
freshly ground peppers
2 Tbsps dried onions
fresh cilantro (for garnish)

Preparation steps

1.

Peel onions and dice. Melt butter in a saucepan and saute onions until soft. Add brown sugar and caramelize. Deglaze with soy sauce and broth. Add the sambal and bring to a boil. Stir in as much peanut butter as needed to form a thick sauce.

Prepare rice according to package directions in salted water. Rinse green beans, trim and blanch for about 8 minutes in salted boiling water. place in ice water and drain. Coarsely chop peanuts.

Rinse chicken, pat dry and cut into strips. Heat oil in a pan and fry chicken until lightly browned. Add green beans and briefly cook. Season with salt and pepper.

Drain rice and place in deep bowls. Top with green beans and chicken. Pour sauce on top. Sprinkle with peanuts and dried onions and garnish with fresh cilantro.
