Chicken Burgers with Grilled Vegetables

- 600 grams Chicken breasts
- 1 scallion
- 4 fresh garlic cloves
- 2 egg yolks
- 4 Tbsps breadcrumbs
- salt
- freshly ground peppers
- 1 Beefsteak tomato
- 4 Lettuce (such as Lettuce)
- 1 red Bell pepper
- 1 Zucchini
- 3 Tbsps olive oil
- 4 Panini
- 5 Tbsps Greek Yogurt (0.1% fat)
Preparation steps
Rinse the chicken breast, pat dry and grind through the fine disc of a meat grinder into a bowl. Rinse the scallions and thinly slice. Peel and chop the garlic. Add the scallions, garlic and egg yolks to the chicken with as much breadcrumbs as needed to make a mixture that can be shaped. Season with salt and pepper, cover and refrigerate.
Rinse and slice the tomato. Rinse and shake the lettuce dry. Rinse the pepper halve lengthwise, remove the seeds and white ribs and cut into rings. Rinse and slice the zucchini. Heat 2 tablespoons olive oil in a pan and saute the peppers and zucchini, stirring occasionally for 5 minutes. Season with salt and pepper.
Heat a grill pan and brush with oil. Shape the chicken mixture into 4 burgers and grill on both sides until cooked through, about 8 minutes. Halve the panini horizontally and toast. Place the burgers on the panini and top with yogurt, lettuce and tomato and arrange on plates.
