500 grams Chicken breasts
2 Apple
1 onion
2 carrots
1 garlic clove
2 Tbsps Peanut oil
1 Tbsp Curry powder
150 milliliters Chicken broth
150 grams Peas
2 Tbsps apple cider vinegar
1 tsp honey
1 tsp cornstarch
salt
freshly ground peppers

Preparation steps

Rinse the chicken, pat dry and cut into small cubes. Rinse, quarter and core the apples, and cut the quarters into pieces. Peel the onion and cut into cubes. Peel the carrot and cut into sticks. Peel and finely chop the garlic.

Heat the oil in a skillet and saute the chicken untl lighlty browned. Add the garlic, onion, carrot and apple and saute briefly, then mix in the curry powder and pour in a little broth. Add the peas, vinegar and honey and simmer over low heat, stirring occasionally until the chicken is cooked through and the vegetables have a slight bite, about 10 minutes. Add broth if the pan is getting too dry. Stir the cornstarch with 1-2 tablespoons of water and stir into the simmering pan, cook, stirring until the sauce is slightly thickened.

Season with salt and pepper and serve as desired with rice and chips.
