- 2 Tbsps butter
- 12 ozs Mushrooms
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- ¼ cup Mayonnaise
- 1 tsp lemon juice
- 2 chopped scallions
- 3 Chicken breasts (halves)
- ¼ cup fresh Basil (half chopped, half whole)
- 1 small Red onion (diced, plus a few sliced rings for serving)
- ½ cup Walnut (toasted and chopped)
- 4 slices whole grain bread (toasted)
- 1 large Avocado (sliced)
Preparation steps

In a sauté pan over medium-high heat, melt the butter. Add the mushrooms and cook, stirring frequently, until browned, 5 to 7 minutes. Season with salt and pepper.

In a bowl, whisk together the mayonnaise, the lemon juice, and scallions until blended and smooth.

Dice chicken into 1/4 inch pieces. Fold the chicken into the mayonnaise. Add in the basil, onion and walnuts; mix together until well combined.

To assemble layer avocado slices on toast. Spread a portion of the chicken salad, top with a few fresh basil leaves and a slice of toast. Layer sliced onion rings, another slice of toast, a layer of avocado slices, a layer of chicken salad, top with fresh basil leaves and finish with the last slice of toast. Pierce with a wooden skewer to hold together and serve.
