- 3 shallots
- 1 garlic clove
- 2 Celery
- 2 untreated lemons
- 300 grams Chicken breasts
- ½ handful parsley
- ½ handful Basil
- 2 Tbsps olive oil
- 800 milliliters Chicken broth
- 200 milliliters Whipped cream
- salt
- peppers
Preparation steps
1.
Peel shallots and garlic and chop finely. Rinse celery, trim and cut into fine strips. Rinse a lemon in hot water, dry and grate the peel. Squeeze both lemons. Rinse chicken breast fillet, pat dry and cut into cubes. Rinse parsley and basil, shake dry and chop.

Heat oil, sauté shallots and garlic in it. Add celery and fry for 1-2 minutes. Add lemon zest and juice to broth and simmer for about 5 minutes. Add chicken breast cubes to soup, turn down temperature and let the meat simmer for about 5 minutes. Add vegetables, herbs and cream. Season and serve with salt and pepper.
