- 2 Tbsps Oil
- 18 ozs Broccoli
- 1 Red onion
- 2 scallions
- 2 orange and red Bell pepper
- 2 Tbsps red Curry paste
- ⅞ cup Coconut milk
- ⅞ cup Chicken broth
- 1 Tbsp freshly grated ginger (freshly grated)
- soy sauce
- salt
- freshly ground Black pepper
- 1 Lime

Preparation steps

Wash and dry the chicken and cut into strips.

Peel, halve and slice the onion.
3.
Wash and trim the scallions and cut into thin rings.
4.
Wash, halve and core the bell peppers and cut into strips.

Heat the oil and saute the onion, broccoli and bell peppers. Add the curry paste and scallions and saute briefly, then add the coconut milk and chicken broth. Simmer for 2-3 minutes. Stir in the chicken and ginger and cook for 8-10 minutes, stirring occasionally, until the chicken is done. Halve the lime, cut one half into wedges and squeeze the other half. Season the sauce with salt and pepper and add lime juice and soy sauce to taste. Serve on plates and garnish with the lime wedges.
