- 2 cups canned chickpeas (drained)
- 1 onion (finely chopped)
- 1 clove garlic cloves (crushed)
- 2 Tbsps chopped parsley
- 1 pinch ground Cumin
- cayenne pepper
- 4 Tbsps all-purpose flour
- 2 Tbsps Sesame seeds
- olive oil (for frying)
- For the dressing
- ⅜ cup plain Yogurt
- 1 Tbsp Lime juice
- 1 Tbsp chopped mint
- To garnish
- 2 Tomatoes (sliced)
- 3 ½ ozs Cucumber (sliced)
- 4 Lettuce (e. g. lollo bianco)
- 2 Pita bread
Preparation steps
1.
Puree the chickpeas in a food processor with the onion, garlic and parsley. Put into a bowl and season with cumin, salt and cayenne pepper.

Knead in the flour and with damp hands shape into walnut-sized balls, adding a few sesame seeds to each ball. Gently press flat

Heat the oil in a frying pan to cover the base and fry on both sides for about 5 minutes.
4.
For the dressing: mix together the yoghurt, lime juice and mint.
5.
Cut each pita bread in half.
6.
Stuff the salad ingredients into the pita breads with some of the dressing. Add the falafel balls and serve immediately.
