5.333 cups Strawberries (sliced)
1 Grapefruit (peeled and filleted, juice retained)
1 organic lemon (juices and zest grated)
cup Orange liqueur
1 ⅔ cups Apple juice
3 Tbsps powdered sugar
mint (to garnish)

Preparation steps

1.
Purée half the strawberries and sieve. Add the grapefruit juice, lemon juice and zest, the liquor and the apple juice.
2.
Sweeten to taste with icing sugar and chill for around one hour.
3.
Serve the soup in bowls and add strawberries and grapefruit fillets. Garnish with mint and serve with a dollop of cream if desired.
