Ingredients

For the wonton dough
2 cups all-purpose flour
½ tsp salt
1 egg (beaten)
½ cup water
For the filling
9 ozs ground pork
2 scallions (finely chopped)
1 small carrot (finely chopped)
2 red chili peppers (deseeded and finely chopped)
1 clove garlic cloves (minced)
2 tsps black Sesame seeds
1 tsp salt
2 tsps Rice vinegar
1 egg (beaten)
2 Tbsps chopped parsley
12 Chives

Shop-bought wonton wrappers may be used instead of making your own dough.

Preparation steps

1.
Mix the flour, salt, egg and water in a mixing bowl until you have a smooth dough. You may need to add a little more water but be careful the dough doesn't become too wet.

Turn the dough onto a floured board and knead for 10 minutes then place in a clean bowl, cover and leave to rest for 30 minutes.

To make the filling, mix together all the ingredients except the chives, stirring in one direction only.

Turn the dough onto a floured board, knead it gently then roll into a cylinder and cut into 12 pieces. Roll each piece of dough into a square about 4" x 10cm x 4" x 10cm and place a little of the filling in the centre. Pull the edges together over the filling to make an open-necked parcel and tie the waist of the parcel with a chive to keep it together.

Carefully transfer the parcels to a steamer and steam for about 10 minutes or until the filling is cooked through.
