Ingredients

For the ginger ale
2 inches freshly grated ginger (peeled and grated)
4 Tbsps sugar
2 cups water
mint (to garnish)
For the wontons
4 Wonton wrapper (each about 6 cm square)
3 Tbsps Oil
½ clove garlic cloves (finely chopped)
1 ¾ ozs ground pork
½ tsp Chinese 5 spice powder
1 scallion (chopped)
cilantro (to garnish)
Chili flakes (to garnish)

Preparation steps

1.
Put the ginger, sugar and water in a small pan and bring to the boil, stirring all the time.

Remove the pan from the heat, let it steep for 8 hours then strain through a fine sieve.

For the won tons, heat the oven to 200ºC (180º fan). Brush the won ton wrappers with a little of the oil and press into small tin moulds. Bake in the oven for 10 minutes or until the won tons are golden brown.

Heat the remaining oil in a small pan and gently fry the garlic until soft. Add the pork and five-spice powder and cook until the pork is cooked through then stir in the spring onion.
5.
To serve, pour the ginger ale into glasses filled with crushed ice and garnish with mint leaves. Fill the won ton cases with the pork mixture, garnish with the coriander leaves and chilli and serve with the ginger ale.
