¼ cup gluten-free soy sauce
¼ cup Tomato sauce
1 Tbsp light brown sugar
14 ozs Noodles
boiling water
2 Tbsps vegetable oil
12 ozs pork fillets (thinly sliced)
2 shallots (sliced)
1 stick Celery (thinly sliced)
1 carrot (cut into matchsticks)
¼ small Pineapple (chopped)
5 ozs Snap pea
4 ½ ozs cherry Tomatoes (halved)

Preparation steps

1.
Mix together the soy sauce, tomato sauce and brown sugar. Set aside.
2.
Put the noodles in a heatproof bowl. Cover with boiling water and leave to stand for 2 minutes.
3.
Drain, separate the noodles and set aside.
4.
Heat a wok or deep frying pan over a high heat. Add the oil and heat until hot. Add the pork and stir-fry for 2 minutes, until just cooked through. Remove from the pan and set aside.
5.
Add the shallots, celery, carrot, pineapple and mange tout to the pan. Stir-fry for 2 minutes.
6.
Add the pork, noodles, sauce mixture and tomatoes. Stir-fry for 1–2 minutes until hot and serve immediately.
