- 21 ozs lean, boneless Pork
- 3 Tbsps soy sauce
- 1 Tbsp Curry powder
- 1 tsp five spice powder
- 6 Tbsps Peanut oil
- 1 clove garlic cloves (crushed)
- 2 carrots (cut into batons)
- 1 Leek (finely sliced)
- 1 red pepper (deseeded and cut into batons)
- 1 green Bell pepper (deseeded and cut into batons)
- 1 yellow pepper (deseeded and cut into batons)
- 1 tsp sugar
- ½ cup vegetable stock
- 3 ½ ozs shelled Peanuts (roughly chopped)

Preparation steps

Cut the pork into thin strips and put into a bowl. Mix the soy sauce with the curry powder and five-spice powder, pour over the meat, mix well and leave to marinate for about 30 minutes.

Heat three tablespoons of the peanut oil in a wok and quickly sauté the meat for about 1-2 minutes. Take the meat out and set aside.

Put the rest of the oil into the wok and stir-fry the garlic, carrots, leeks and peppers. Add the sugar and stock and return the meat to the wok. Add the chopped peanuts, boil briefly and season to taste. Serve in bowls garnished coriander leaves and with rice as an accompaniment.
