1 Vanilla bean
250 milliliters milk
75 grams sugar
4 egg yolks
80 grams Dark chocolate
250 milliliters Whipped cream

Preparation steps

Slit the vanilla bean lengthwise and scrape the seeds into a heatproof bowl set over a water bath along with the milk, sugar and the egg yolks and beat until creamy. Remove from the heat, set the bowl over an ice bath and stir until cold. Chop the chocolate.  Remove the vanilla bean from the saucepan. Whip the cream and fold it into the milk mixture along with the chocolate.

Freeze in an ice cream maker according to manufacturers' direction, or scrape into a shallow bowl and freeze 3 hours, stirring every 30 minutes to prevent large ice crystals from forming.

Scoop out ice cream into bowls with an ice cream scoop and serve.

Serve as desired with caramel sauce, whipped cream and cookies.
