5 ozs Dark chocolate (70% cocoa solids)
5 eggs (separated)
2 Passion fruit

Preparation steps

1.
Put the chocolate in a heatproof bowl and place over a pan of simmering (not boiling) water until melted. Remove from the heat and allow to cool slightly.
2.
Beat in the egg yolks, one at a time until well blended.
3.
Whisk the egg whites until stiff, but not dry and gradually fold into the chocolate mixture.
4.
Divide between 4 glasses and chill for at least 3 hours.
5.
Scrape out the pulp from the passion fruit and spoon on top of each glass. Serve immediately.
