Chocolate Orange Cake
Ingredients
- For the dough
- 200 grams Dark chocolate
- 200 grams softened butter
- 150 grams powdered sugar
- 8 eggs
- 100 grams sugar
- 150 grams Pastry flour
- 50 grams finely ground almonds
- For the filling
- 350 grams Mascarpone
- 2 pkgs whipped cream stabilizer
- 2 tsps Grand Marnier
- 2 large Oranges (peeled and cut into small pieces)
- 2 tsps grated Shell (of an organic orange)
- For the topping
- 200 grams Dark chocolate
- 200 grams sugar
- also
- butter (for the pan)
- ground almonds (for the pan)
- candied Orange peel (homemade or purchased)
- silver Sugar pearls
Preparation steps
Grease pan with butter and sprinkle with almonds. Place in refrigerator.
For the dough, melt crushed chocolate over a warm water bath. Mix butter with powdered sugar until fluffy. Separate eggs. Gradually add egg yolks and melted chocolate to butter.
Beat egg whites with sugar until stiff. Carefully fold into chocolate mixture. Mix flour with almonds and also fold in. Pour batter into pan and bake in a preheated oven at 180°C (approximately 350°F) for 1 hour. Cool and remove from pan.
For the filling, mix mascarpone with oranges, Grand Marnier, orange zest, cream stabilizer and sugar.
Cut cake twice horizontally. Cover bottom layer with orange cream, top with middle layer, spread on remaining orange cream and finish with top cake layer.
For the topping, finely grate chocolate and melt over a water bath. Dissolve sugar in water and cook for 5-8 minutes. Stir in chocolate until thick and quickly spread over cake.
Cut out stars from orange peel and use to garnish cake along with sugar pearls. Cut and serve.
