- 400 grams Pork tenderloin
- 10 grams dried shiitake mushrooms
- 100 grams soybean sprout
- 2 White cabbage (fine strips)
- 1 onion (cubed)
- 2 carrots (strips)
- 1 garlic clove (chopped)
- 150 grams Snow peas (trimmed)
- ½ tsp ground ginger
- 200 milliliters Broth
- 1 tsp cornstarch
- 3 Tbsps soy sauce
- 2 Tbsps Rice wine
- 1 tsp sugar
- salt
- peppers
- 1 egg
- vegetable oil
- 200 grams Rice
Preparation steps
Cut the meat into strips and marinate in a marinade of the soy sauce, rice wine, sugar, pepper and salt for 45 min. Soak mushrooms in lukewarm water.
Boil rice with approximately twice the amount of lightly salted water, cover and cook about 25 min. at a very low heat to let swell.
Heat oil in a wok (pan) and add the drained meat, drained mushrooms, garlic and ginger and fill with the marinade. Cook 2- 3 min. and then take everything out of the pan. Pour some oil in the wok and stir fry the vegetables in it. Add the removed ingredients, pour the broth and sprouts, allow everything to boil and thicken to taste with cornstarch in a little water. Meanwhile in a small pan quickly fry an egg.
To serve arrange the chop suey on plates, garnish with shreds of fried egg and provide rice.
