1 ½ cups unsalted butter
½ cup granulated sugar
2 Tbsps honey
2 ¾ cups all-purpose flour (plus extra for work surface)
½ tsp Baking powder
1 pinch salt
2 Tbsps fresh rosemary (finely chopped)

Preparation steps

1.
In a large bowl, beat butter, sugar and honey together until light and creamy. Stir in flour, baking powder, salt and chopped rosemary until well blended. Cover and refrigerate for 1 hour.

Preheat oven to 350º F. Line two cookie sheets with parchment paper.

On a lightly floured work surface, roll dough out flat to a thickness of 1/4-inch. Cut into diamonds 1-inch by 2 1/2-inches in size. Place on prepared cookie sheets 1-inch apart. Decorate each cookie with fresh rosemary leaves and sprinkle with sugar or sea salt.

Bake for 8 minutes, or until the edges are golden brown. Transfer to wire racks and cool completely. Serve. Store in an airtight container at room temperature.
