- ¾ cup softened butter
- ½ cup brown sugar
- 1 egg (lightly beaten)
- 1 tsp pure vanilla extract
- 1 pinch salt
- ¾ cup ground almonds (peeled)
- 2 tsps allspice
- flour (for work surface)

- ¼ cup ground Hazelnuts
- brown sugar
- ¾ cup powdered sugar (give or take)
- 1 tsp lemon juice
- 2 Tbsps Pine nuts
Preparation steps

In a large bowl, combine butter and sugar. Gradually add the eggs and vanilla, beat until the mixture is smooth.

Stir in the salt, ground almonds and allspice. Quickly knead into a smooth dough, adding flour or a little water if needed. Cover in plastic wrap and chill in the refrigerator for at least 30 minutes.

Preheat the oven to 350º F. Line a baking sheet with parchment paper.

On a lightly floured work surface roll out the dough to a thickness of 1/8-inch to 1/4-inch; cut out the cookies using Christmas tree cookie cutters in varying sizes. Sprinkle 1/3 of the cookies with hazelnut flakes and bake all the cookies in the oven for 10 to 12 minutes, or until golden brown around the edges.

Remove cookies from oven, while still warm sprinkle 1/3 of the remaining cookies with brown sugar. Cool all cookies on a wire rack.

Combine the confectioners' sugar and lemon juice, stirring until the desired consistency is achieved. Cover the remaining undecorated cookies with icing and decorate with pine nuts. Allow the icing to set before serving. Serve.
