- 150 g spelt flour and butter
- per 100 g of gem. hazelnuts and cane sugar
- 4 drops Butter Vanilla emulsion (can be found at a specialty baking store)
- Ground cinnamon
- 2 Tbsps milk
- 50 grams sliced Hazelnuts
Preparation steps

Combine the flour, baking powder and hazelnuts, make a well in the center, add 2 tablespoons cold water, the sugar, butter-vanilla emulsion and cinnamon to the well and sprinkle the chopped butter around the edges.

Chop all ingredients together until crumbly then knead until smooth. Roll out thinly on a lightly floured work surface and cut out 7 cm (approximately 2 3/4 inch) fir trees. Arrange on baking sheets lined with parchment paper.

Brush the cookies with milk and sprinkle with sliced hazelnuts. Bake in a preheated oven (180°C) (approximately 350°F) for 10 minutes. Let cool on the baking sheets before serving.
