½ tsp cardamom seeds
2 cloves
2 ¾ ozs Dark couverture chocolate
4 ½ ozs Whole Grain Spelt Flour
2 ¾ ozs ground Hazelnuts
2 ¾ ozs soft butter
2 ozs whole cane sugar
1 egg
4 ozs cacao nib (Cocoa shavings)

Preparation steps

1.

Roast coriander, cardamom and cloves in a hot pan without fat over medium heat for 3 minutes until fragrant. Let cool for 5 minutes; then grind finely in a spice grinder or mortar.

Meanwhile, finely grate couverture and mix with flour and hazelnuts. Beat butter with sugar and spice mixture until creamy. Add egg and beat in. Add flour mixture and knead everything into a smooth dough. Cover and chill for 1 hour.

Remove small portions of the dough with a teaspoon, shape into balls, flatten slightly and roll the top in the cocoa chips.

4.

Place the rounds on a baking tray lined with baking paper (cocoa side up) and bake in a preheated oven at 160 °C / 320 °F for 15 minutes. Remove from the oven and let cool on a wire rack.
