1 Vanilla bean
40 grams sugar
½ tsp cinnamon
6 sheets white gelatin
300 grams Strawberries
2 Tbsps powdered sugar
1 Tbsp sherry
powdered sugar (for dusting)
mint (for garnishing)

1 small honeydew melon
200 grams green Grape
1 bowl Strawberries
1 bowl Cape gooseberries
50 grams Amaretti cookies
4 centiliters Maraschino liqueur

Preparation steps

1.

Combine cream, cinnamon and sugar and bring to a boil. Slit vanilla bean lengthwise, scrape seeds, add to cream and simmer  for 10 minutes. Soak gelatine in cold water. remove vanilla bean from cream, add squeezed gelatine into cream and stir well. Pour cream into ramekins and refrigerate for 6 hours.

Rinse and dry strawberries, hull and set aside some for garnishing. Combine with powdered sugar and sherry, mix well and bring to a boil. Simmer for a few minutes, then strain through a sieve and cool.

Invert panna cotta ramekins onto plates, drizzle with berry compote and garnish with mint and strawberries. Sprinkle with powdered sugar and serve accompanied by a fruit salad.

Peel or rinse all fruit for salad, remove seeds and cut into bite-sized pieces.

5.

Place all fruit in a bowl, add crumbled amaretti and maraschino and sprinkle with powdered sugar. Garnish with mint and serve alongside panna cotta.
