Ingredients

For the panna cotta
1 Vanilla bean
500 milliliters Whipped cream
1 Cinnamon stick
50 grams sugar
5 sheets white gelatin
For the pureed berries
200 grams mixed Berry (such as raspberries, currants, blueberries and blackberries)
1 Tbsp lemon juice
100 grams jam sugar
To garnish
mint
50 grams mixed Berry (such as raspberries or blueberries)

Preparation steps

For the panna cotta, slit the vanilla pod lengthwise and boil in a pot with the heavy cream, cinnamon and sugar. Set aside and cool for about 10 minutes. Soften the gelatin in a bowl of cold water. Pour vanilla cream through a sieve. Squeeze the gelatin well and stir into the vanilla cream to dissolve.

Rinse 4 glasses with cold water, slightly incline in a dish (so they do not fall down), pour in the cream and allow to cool. Refrigerate until solidified, at least 4 hours. Meanwhile, for the pureed berries, sort the berries, rinse if needed, drain and mix with the lemon juice and sugar. Allow to macerate for about 30 minutes.

Place berries in a saucepan over medium heat and simmer for 3 minutes. Strain through a sieve. Place the panna cotta glasses in upright position, fill with berry mixture and chill for about 1 hour in the refrigerator. Serve garnished with mint and fresh berries.
