Preparation steps

1.
Heat the oven to 190°C (170° fan) 375°F gas 5.
2.
Push the lime quarters, lemon quarters, whole garlic cloves and 1 sprig rosemary into the cavity of the chicken.
3.
Put the chicken in a roasting tin and drizzle the lemon juice over. Season well with salt and pepper. Drizzle with olive oil and sprinkle with rosemary leaves from the remaining sprig.
4.
Roast for about 2 hours, until cooked through. To test the chicken is cooked, insert a skewer into the thickest part of the breast and check to see if the juices run clear and there is no pink meat.
5.
Place the chicken on a serving plate and garnish with lime and lemon wedges and rosemary.
