For the pink grapefruit macarons
1 ½ cups powdered sugar
¾ cup ground almonds
2 medium egg whites
1 tsp finely grated Orange zest
red Food coloring
For the pink grapefruit buttercream
½ cup unsalted butter (softened)
¾ cup powdered sugar
2 Tbsps pink Grapefruit juice
red Food coloring
For the orange macarons
1 ½ cups powdered sugar
¾ cup ground almonds
2 medium egg whites
1 Orange (zest finely grated)
orange Food coloring
For the orange buttercream
½ cup unsalted butter (softened)
¾ cup powdered sugar
1 tsp Orange blossom water
orange Food coloring
For the lemon macarons
1 ½ cups powdered sugar
¾ cup ground almonds
2 medium egg whites
1 lemon (zest finely grated)
yellow Food coloring
For the lemon buttercream
½ cup unsalted butter (softened)
¾ cup powdered sugar
1 tsp Lemon extract
yellow Food coloring

Preparation steps

Prepare the pink grapefruit macaroon mixture by combining the icing sugar, ground almonds and zest together in a large mixing bowl.

Beat the egg whites in a separate, clean mixing bowl until stiff peaks form. Fold the egg whites into the ground almond mixture until just incorporated. Add a few drops of food colouring to the mixture and fold in gently until you have the right colour.

Spoon into a piping bag fitted with a 1.5" diameter straight-sided nozzle. Pipe circles onto the lined baking trays and leave them to set on the trays for 15 minutes.

Prepare the orange and lemon macaroon mixtures by following steps 1 - 3 above.

Preheat oven to 325°F.

Bake the macaroons for 8 - 10 minutes or until just set. Remove from the oven and leave to cool on the trays.

Prepare the fillings as all the macaroons are cooling. For the pink grapefruit filling, beat together the icing sugar with the unsalted butter until smooth. Add the pink grapefruit juice and a few drops of red food colouring and beat again until you have a homogeneous red coloured filling.

Sandwich the grapefruit macaroon biscuits together in pairs with the buttercream.

Follow steps 6 and 7 to make the orange and lemon buttercreams and complete the macaroons. Stack the macaroons when you are ready to serve them.
