800 grams clam
2 shallots
1 garlic clove
2 Tbsps olive oil
100 milliliters dry white wine
100 milliliters fish stock
2 sprigs oregano
salt
freshly ground peppers

Preparation steps

Scrub clams, trim and remove beard. Discard any opened mussels. Peel shallots and garlic and finely chop. Heat oil in a saucepan, saute shallots and garlic briefly until translucent, then add white wine and fish stock. Rinse oregano and add one sprig to the saucepan.

Add drained clams. Cover and cook for about 5 minutes, until the shells have opened (discard any closed shells) and season with salt and pepper. Remove clams from the saucepan and serve on plates garnished with remaining oregano.
