cup olive oil
4 sprigs rosemary (chopped)
6 cloves garlic cloves

Preparation steps

1.
Preheat the oven to 200°C (180 fan) | 400°F | gas 6.
2.
Rub the leg of lamb with the olive oil. Make slits in the flesh with a sharp knife and stud with the rosemary.
3.
Arrange on a roasting tray and season with salt and black pepper. Lightly crush the whole garlic cloves and add to the roasting tray.
4.
Cover with foil and roast for 30 minutes before removing the foil and roasting for a further 50 minutes. Leave to rest, covered, in a warm place for 20 minutes before carving and serving.
