250 grams Pastry flour
125 grams powdered sugar
½ lemon (zested)
1 egg
150 grams cold butter (cubed)

Preparation steps

1.

Combine the flour, powdered sugar and lemon zest in a large bowl. Make a well in the center and add the egg. Distribute the butter over the top and Mix together with a pastry cutter or two forks. Quickly knead with hands to form a smooth dough. Wrap with plastic wrap and refrigerate for at least 1 hour.

Preheat the oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper.

Roll the dough out on a floured surface to about 3-4 mm (approximately 1/10-1/8 inch) thick. Cut into assorted shapes (such as flowers, hearts, Christmas trees, etc.) using cookie cutters. Place onto the prepared baking sheet and bake for 10 minutes, until golden brown. Remove from the oven and cool on a wire rack.
