Ingredients

For the yeast dough
2 Tbsps Yeast
2 tsps Dried yeast
3 cups flour
4 Tbsps olive oil
1 tsp salt
olive oil (for greasing the tin)
For the topping
6 ½ cups ripe Plum tomato (half peeled and diced, half sliced)
1 Tbsp tomato puree
1 ½ cups fresh Mozzarella (sliced)
4 Tbsps olive oil
1 bunch Arugula (finely shredded)

Preparation steps

1.
Mix the yeast with 200 ml lukewarm water and a pinch of sugar. Add the flour, olive oil and salt and knead into a smooth dough. Cover and leave to rise in a warm place for around 1 hour.

Heat the oven to 240°C (220°C in a fan oven), 475°F, gas 9.

Shape the dough into 4 balls and roll out on a floured work surface to around 22 cm ? leaving the edge a bit thicker. Place the pizza dough into greased pizza tins.

Mix together the diced tomatoes and the tomato puree and season with salt and ground black pepper. Spread the mixture onto the pizzas leaving the edge free.
5.
Place the sliced tomatoes on the pizzas and place the mozzarella on top of the tomato slices. Drizzle with olive oil.
6.
Bake for 15-20 minutes until almost done. Sprinkle the rocket on top of the pizza and bake for a further 5 minutes until golden brown.
