- 100 milliliters Orange juice
- 30 grams sugar
- 200 grams Whipped cream
- 2 egg yolks
- 2 pinches ground Cardamom
- 2 pinches Ground cinnamon
Preparation steps

Peel clementines and divide into individual segments. Mix orange juice with sugar, cream, egg yolks and spices over a hot water bath, stirring constantly, and heat until mixture thickens and becomes creamy.

Preheat broiler. Arrange clementines in 4 ramekins and top each with egg mixture. Place ramekins under broiler and cook until golden brown, watching carefully.
