50 grams cocoa powder
100 grams brown sugar
3 Tbsps Coconut flakes
150 grams cold butter
1 egg
75 grams peeled almonds

Preparation steps

Mix the flour with the baking powder, cocoa powder, brown sugar and coconut flakes, transfer to a bowl and make a well in the center. Cut the butter into cubes and sprinkle over the flour. Pour the egg into the flour well and knead quickly with the hands to a smooth dough. Shape the dough into a roll of about 5 cm (approximately 2 inches) diameter, wrap in plastic wrap and let rest for 30 minutes in the refrigerator.

Meanwhile, chop the almonds coarsely. Line a baking tray with parchment paper.

To make the cookies, unwrap the dough and cut into slices of about 1 cm (approximately ½ inch) wide with a large knife. Place a few chopped almonds over each dough slice and press firmly. Place the cookies on the baking tray. Bake in a preheated oven at 200°C (fan: 180°C, gas mark 3) (approximately 400°F) for 10-12 minutes. Remove the cookies from the oven and let cool on wire rack. Serve.
